Vegan White Bean Soup Serbian Style (Print Version)

# Ingredients:

01 - 4 onions, finely diced
02 - 3 cloves garlic
03 - 2 leeks
04 - 2 carrots
05 - 3 slices celery root/celeriac (about finger thick)

06 - 2 cans white beans
07 - 2 cans diced tomatoes
08 - 8 cups (2 liters) vegetable stock
09 - 200 g freekeh, cracked
10 - 2 Tbsp tomato paste

→ Herbs & Spices

11 - 2 tsp marjoram
12 - 2 tsp oregano
13 - 2 bunch parsley, chopped
14 - 1 tsp celery salt
15 - 2 tsp onion powder
16 - 4 tsp paprika powder, sweet
17 - 1 tsp smoked salt (optional)

# Instructions:

01 - Start by grinding the Freekeh using a high speed blender with the pulse function. Pour the cracked freekeh in vegetable broth. If using TVP instead, submerge it in enough vegetable broth to cover it. Let soak overnight.
