Love Potion Drink (Print version)

A fizzy pink raspberry mocktail made with fresh berries, sherbet, cranberry juice, and sparkling lemonade.

# Ingredients:

For the raspberry base

01 - 1 cup (125 g) fresh raspberries, plus more for garnish
02 - 1 tablespoon granulated sugar, optional if berries are sweet
03 - 1 tablespoon fresh lemon juice
04 - 1 cup (240 ml) chilled cranberry juice

For the drinks

05 - 1 pint (475 ml) raspberry sherbet
06 - 3 cups (720 ml) chilled sparkling pink lemonade
07 - 6 thin lemon slices, for garnish

# Instructions:

01 - Combine the raspberries, sugar, and lemon juice in a bowl. Mash with a fork until juicy and mostly broken down. Strain through a fine-mesh sieve if you want a smoother drink.
02 - Divide the raspberry puree between 6 glasses. Pour about 2 tablespoons of chilled cranberry juice into each glass and stir lightly.
03 - Add one small scoop of raspberry sherbet to each glass. Leave at least 1 inch of space at the top so the drink can foam.
04 - Slowly pour chilled sparkling pink lemonade into each glass. Pause if it foams up, then continue pouring until the glass is nearly full.
05 - Add fresh raspberries and a thin lemon slice. Serve immediately while cold, fizzy, and frothy.

# Good to know:

01 - Best served right after the sparkling lemonade is added.
02 - The raspberry puree can be made up to 3 days ahead and refrigerated.
03 - For a punch bowl, combine puree and cranberry juice first, then add sparkling lemonade and sherbet just before serving.
