Ultimate Curried Sausages (Print version)

Creamy Aussie-style curried sausages with tender vegetables, warm curry gravy, and browned beef sausages.

# Ingredients:

For the sausages and vegetables

01 - 1 1/2 lb (680 g) thick beef sausages
02 - 1 tablespoon olive oil
03 - 1 large brown onion, sliced
04 - 2 medium carrots, thinly sliced
05 - 1 small green apple, peeled and grated
06 - 3 cloves garlic, minced

For the curry gravy

07 - 2 tablespoons mild curry powder
08 - 1/2 teaspoon ground turmeric
09 - 1 1/2 cups (360 ml) beef stock
10 - 1 cup (240 ml) full-fat coconut milk
11 - 1 tablespoon tomato paste
12 - 1 teaspoon brown sugar, optional
13 - 1 cup (140 g) frozen peas
14 - 2 teaspoons cornstarch mixed with 1 tablespoon cold water
15 - Salt and black pepper, to taste
16 - 1 teaspoon lemon juice or apple cider vinegar
17 - Cooked white rice or mashed potatoes, for serving
18 - Chopped cilantro or parsley, for serving

# Instructions:

01 - Heat the oil in a deep skillet over medium-high heat. Brown the sausages on all sides for 6-8 minutes, then transfer them to a board.
02 - Let the sausages rest for 3 minutes, then slice them into thick diagonal pieces. They will finish cooking in the sauce.
03 - Lower the heat to medium. Add the onion and carrots to the same pan and cook for 5-6 minutes until the onion softens.
04 - Add the grated apple, garlic, curry powder, and turmeric. Stir for 1 minute until fragrant, scraping the bottom of the pan.
05 - Stir in the beef stock, coconut milk, tomato paste, and brown sugar if using. Return the sliced sausages and simmer gently for 12-15 minutes, until the sausages are cooked through and the carrots are tender.
06 - Stir in the peas and cornstarch slurry. Cook for 2-3 minutes until the gravy is glossy. Season with salt, pepper, and lemon juice or vinegar.
07 - Spoon the curried sausages over rice or mashed potatoes and finish with cilantro or parsley.
