01 - 8 large eggs
02 - 4 slices cooked bacon, crispy
03 - 4 buttery croissants, halved
04 - 1/2 cup fresh guacamole
05 - 4 slices pepperjack cheese
06 - 1/2 cup basic garlic butter tomato sauce

# Instructions:

01 - Heat your oven to 350°F. Place the croissants cut side down on a baking sheet and toast for a few minutes until golden. If they fit in your toaster, you can use that instead.
02 - While everything else is ready to go, cook your eggs. Make them soft scrambled for the best texture and flavor.
03 - Build your sandwiches immediately while the eggs are still warm and creamy. Start with a layer of tomato sauce on the bottom half of each croissant, then add the soft scrambled eggs, a slice of pepperjack cheese, bacon, and top with guacamole before closing with the top half of the croissant.
