Greek Chicken & Tzatziki Salad (Print Version)

# Ingredients:

→ Chicken

01 - 2 large chicken breasts, boneless and skinless
02 - 1 tablespoon olive oil
03 - 1 teaspoon dried oregano
04 - Salt and pepper to taste

→ Salad

05 - 4 cups romaine lettuce, chopped
06 - 1 cup cherry tomatoes, halved
07 - 1 small red onion, thinly sliced
08 - 1/2 English cucumber, sliced into half moons
09 - 1/2 cup Kalamata olives, pitted

→ For Serving

10 - 1/2 cup Greek salad dressing
11 - 2 cups Tzatziki
12 - 1/2 cup feta cheese, crumbled

# Instructions:

01 - Heat olive oil in grill pan over medium-high heat. Season chicken with oregano, salt, and pepper. Grill 5-7 minutes per side until internal temperature reaches 165°F. Rest then slice.
02 - Combine lettuce, tomatoes, onion, cucumber, and olives in large bowl. Toss with Greek dressing.
03 - Top dressed salad with chicken strips, dollops of tzatziki, and crumbled feta cheese.
