Sausage Tortellini Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 pound Italian sausage, casing removed.
03 - 3 cloves garlic, minced.
04 - 1 medium sweet onion, diced.
05 - 2 teaspoons Italian seasoning.
06 - Kosher salt and black pepper to taste.
07 - 2 tablespoons all-purpose flour.
08 - 4 cups chicken stock.
09 - 1 (8-ounce) can tomato sauce.
10 - 1 (9-ounce) package refrigerated cheese tortellini.
11 - ½ bunch kale, stems removed and chopped.
12 - ⅓ cup heavy cream.
13 - 3 tablespoons chopped fresh basil.

# Instructions:

01 - Heat oil in stockpot over medium heat. Brown sausage 3-5 minutes, breaking it up. Drain excess fat.
02 - Add onion, garlic, and Italian seasoning. Cook 2-3 minutes until onions are translucent. Season with salt and pepper.
03 - Whisk in flour and cook 1 minute until light brown.
04 - Add tomato sauce and chicken stock. Bring to boil, reduce heat and simmer 10 minutes until slightly thickened.
05 - Add tortellini, cover and cook 5-7 minutes until tender.
06 - Stir in kale until wilted, 1-2 minutes. Add cream and basil, heat through 1 minute. Season to taste.

01 - Use quality Italian sausage for best flavor.
02 - Don't overcook tortellini.
03 - Can garnish with Parmesan or olive oil.
