While the toast bakes, dissolve au jus gravy mix in 710 millilitres cold water and prepare according to package instructions until hot and savory.

Once gravy is ready, submerge sliced roast beef in the hot au jus to gently heat without overcooking.

Lay a half slice of provolone cheese onto each piece of baked toast. Evenly divide the warmed roast beef across the toasts, then top each with another half slice of provolone.

Return assembled toasts to the oven and bake for 3 to 5 minutes until the cheese is fully melted and bubbling.

Garnish with dried parsley if desired. Serve immediately alongside hot au jus for dipping.
