# Ingredients:

For the chicken

01 - 4 boneless skinless chicken breasts, about 1 1/2 lb (680 g) total
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon smoked paprika
05 - 1/2 teaspoon chili powder
06 - 2 tablespoons olive oil

For the honey butter sauce

07 - 1/2 cup (113 g) unsalted butter
08 - 1 small shallot, finely minced
09 - 5 garlic cloves, minced
10 - 1/2 cup (120 ml) low-sodium chicken broth, plus more as needed
11 - 3 tablespoons honey
12 - 2 teaspoons Dijon mustard
13 - 1 tablespoon fresh lemon juice
14 - 1/4 teaspoon cayenne pepper, optional
15 - 2 tablespoons chopped fresh parsley
16 - 1 tablespoon sliced fresh chives

# Instructions:

01 - Pat the chicken dry. If the breasts are thick, slice them into even cutlets or pound to about 3/4 inch thick. Season both sides with salt, pepper, smoked paprika, and chili powder.
02 - Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until deeply golden but not fully cooked through. Transfer to a plate.
03 - Reduce heat to medium. Add butter to the skillet. When melted, stir in the shallot and garlic and cook for 1-2 minutes, just until fragrant.
04 - Whisk in chicken broth, honey, Dijon mustard, lemon juice, and cayenne if using. Scrape the browned bits from the bottom of the pan and bring the sauce to a gentle simmer.
05 - Return the chicken and any plate juices to the skillet. Simmer gently for 6-8 minutes, spooning sauce over the top, until the thickest part of the chicken reaches 165°F.
06 - Stir in parsley and chives. If the sauce is too thick, loosen it with 1-2 tablespoons warm broth. Serve hot with extra sauce spooned over each piece.
