Tennessee Onions (Print version)

Sweet onion rings baked with butter, seasonings, and three cheeses until soft, golden, and bubbling.

# Ingredients:

For the onions

01 - 3 lb (1.4 kg) sweet onions, preferably Vidalia
02 - 6 tablespoons (85 g) unsalted butter, thinly sliced, plus more for the dish
03 - 1 teaspoon kosher salt
04 - 1/2 teaspoon black pepper
05 - 1 teaspoon garlic powder
06 - 1/2 teaspoon sweet paprika
07 - 1/2 teaspoon Italian seasoning

For the cheese topping

08 - 1 cup (115 g) shredded sharp cheddar cheese
09 - 1 cup (115 g) shredded mozzarella cheese
10 - 1/2 cup (50 g) grated Parmesan cheese
11 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Heat the oven to 350°F. Butter a 9x13-inch baking dish.
02 - Peel the onions and slice them into 1/4-inch rings. Separate the rings gently and spread them evenly in the prepared dish.
03 - Sprinkle the onions with salt, pepper, garlic powder, paprika, and Italian seasoning. Dot the butter slices evenly over the top.
04 - Cover the dish tightly with foil and bake for 40 minutes, until the onions have softened and released their juices.
05 - Remove the foil. Sprinkle cheddar, mozzarella, and Parmesan evenly over the onions. Increase the oven temperature to 425°F.
06 - Bake uncovered for 18-22 minutes, until the cheese is melted, bubbling, and browned in spots. Rest for 10 minutes, then finish with parsley and serve hot.

01 - Best served hot after a 10-minute rest.
02 - Slice onions evenly so they soften at the same rate.
03 - If the covered onions release excess liquid, spoon off a little before adding cheese.
