Potato Cups (Print Version)

# Ingredients:

01 - 60 tater tots.
02 - 1 cup colby cheese.
03 - 1 cup diced bacon.
04 - 1 tablespoon Greek yogurt.
05 - 2 green onions, trimmed and sliced thin.
06 - Olive oil spray.

# Instructions:

01 - Heat oven to 350-375°F. Spray 12-cup muffin tin liberally with olive oil.
02 - Place 5 tater tots in each muffin cup. Bake 10 minutes, then press centers with shot glass to form cups.
03 - Fill cups with cheese and bacon. Return to oven for 10-15 minutes until cheese melts and bacon crisps.
04 - Let cool briefly on rack, then gently remove cups to lined baking sheet.
05 - Drizzle with Greek yogurt and sprinkle with green onions. Serve warm.

# Notes:

01 - Can use different cheese varieties.
02 - Can substitute sour cream for yogurt.
