# Ingredients:

01 - 1 (32 oz / 900 g) bag frozen tater tots
02 - Cooking spray

For the meat and egg custard

03 - 1 lb (450 g) breakfast sausage
04 - 8 large eggs
05 - 1 1/2 cups (360 ml) whole milk
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon black pepper

For topping

10 - 2 cups (200 g) shredded sharp cheddar cheese
11 - 2 green onions, thinly sliced

# Instructions:

01 - Cook the breakfast sausage in a large skillet over medium heat, breaking it up with a spoon, until it is fully browned and crumbled, about 6 to 8 minutes. Drain off any excess fat.
02 - Spread the frozen tater tots in a single layer across the bottom of a greased 9x13-inch baking dish. Do not thaw them first.
03 - Scatter the cooked sausage evenly over the tater tots, then sprinkle 1 cup of the shredded cheddar on top.
04 - In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until fully combined.
05 - Pour the egg mixture slowly over the casserole. Top with the remaining 1 cup of cheddar. Bake in a 350°F (175°C) oven for 45 to 55 minutes until the center is set and a knife inserted near the middle comes out clean. Cover loosely with foil if the top browns too quickly.
06 - Let the casserole rest for 10 minutes so it slices neatly. Scatter sliced green onions over the top before serving.
