Preheat your oven to 400°F (200°C). Clean and dry the potatoes, then prick each one with a fork. Wrap them in foil and place them in the oven to bake for about 60 minutes, or until they are tender.

While the potatoes are baking, cook the ground beef in a skillet over medium-high heat until it is browned. Drain any excess fat.

Add the taco seasoning to the beef, along with the amount of water recommended on the seasoning packet. Stir and bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.

Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Unwrap the foil and cut a slit along the top of each potato.

Fill the potatoes with the seasoned beef and top with your favorite taco toppings, such as shredded lettuce, cheddar cheese, sour cream, salsa, and guacamole.

Garnish with chopped green onion and serve hot.
