Taco Doritos Casserole Bake (Print Version)

Seasoned beef, Doritos, and cheese baked together for a bold, hearty comfort dish everyone enjoys.

# Ingredients:

01 - 450 grams lean ground beef
02 - 120 grams yellow onion, diced
03 - 1 teaspoon minced garlic
04 - 1 packet taco seasoning blend
05 - 340 grams frozen corn kernels
06 - 410 grams petite diced tomatoes with green chilies, undrained
07 - 240 grams sour cream
08 - 110 grams finely crushed Doritos
09 - 55 grams loosely crushed Doritos
10 - 340 grams Mexican blend cheese, divided

11 - 170 grams canned black beans, rinsed and drained

→ Garnishes (optional)

12 - Sliced green onions
13 - Diced fresh tomatoes
14 - Shredded lettuce
15 - Sliced avocado
16 - Sour cream

# Instructions:

01 - Preheat oven to 175°C. Lightly coat a 33 x 23 cm baking dish with nonstick spray.
02 - Finely crush 110 grams of Doritos to resemble breadcrumbs; set aside 55 grams loosely crushed for topping.
03 - In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onions softened. Drain excess fat.
04 - Add minced garlic to skillet and sauté for 1 minute. Stir in frozen corn, taco seasoning, diced tomatoes with green chilies (with liquid), and finely crushed Doritos. If using, add black beans.
05 - Remove skillet from heat. Gently combine sour cream and 225 grams of Mexican cheese blend with the beef mixture.
06 - Transfer the prepared mixture to the greased baking dish, spreading evenly. Bake for 5 minutes until warmed through.
07 - Sprinkle remaining 115 grams of Mexican blend cheese and loosely crushed Doritos over the casserole. Return dish to oven and bake an additional 5 minutes until cheese is melted.
08 - Remove from oven. Serve hot, garnishing with green onions, diced tomatoes, shredded lettuce, avocado, and additional sour cream as desired.
