Preheat oven to 175°C. Lightly coat a 33 x 23 cm baking dish with nonstick spray.

Finely crush 110 grams of Doritos to resemble breadcrumbs; set aside 55 grams loosely crushed for topping.

In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onions softened. Drain excess fat.

Add minced garlic to skillet and sauté for 1 minute. Stir in frozen corn, taco seasoning, diced tomatoes with green chilies (with liquid), and finely crushed Doritos. If using, add black beans.

Remove skillet from heat. Gently combine sour cream and 225 grams of Mexican cheese blend with the beef mixture.

Transfer the prepared mixture to the greased baking dish, spreading evenly. Bake for 5 minutes until warmed through.

Sprinkle remaining 115 grams of Mexican blend cheese and loosely crushed Doritos over the casserole. Return dish to oven and bake an additional 5 minutes until cheese is melted.

Remove from oven. Serve hot, garnishing with green onions, diced tomatoes, shredded lettuce, avocado, and additional sour cream as desired.
