# Ingredients:

01 - Sweet Potatoes (peeled and cooked): 5 pounds.
02 - Large Eggs (lightly beaten): 4.
03 - Orange Juice: 1/2 cup.
04 - Butter (softened): 1/2 cup.

06 - Vanilla Extract: 1 teaspoon.
07 - Ground Nutmeg: 1/2 teaspoon.
08 - Salt: Dash.
09 - Miniature Marshmallows: 1 cup.

# Instructions:

01 - Preheat your oven to 350°F (175°C) and grease a 3-quart baking dish.
02 - In a large bowl, mash the cooked sweet potatoes until smooth.
03 - Add the eggs, orange juice, softened butter, sugar, vanilla extract, nutmeg, and a dash of salt. Mix well until all ingredients are combined.
04 - Transfer the sweet potato mixture to the prepared baking dish, spreading it out evenly.
05 - Bake for 35-40 minutes or until the mixture is set.
06 - Remove the dish from the oven, sprinkle the marshmallows on top, and return to the oven.
07 - Bake for an additional 5-10 minutes, or until the marshmallows begin to puff and melt.
08 - Serve warm.
