Heat the oven to 400 degrees F. Prick the sweet potatoes with a fork and roast on a lined baking sheet for 45-60 minutes, until very tender. Cool slightly, scoop out the flesh, and measure 2 packed cups.

Lower the oven to 375 degrees F. Fit the crust into a 9-inch pie plate, line with parchment, and fill with pie weights. Bake for 15 minutes, remove the weights, and bake 5 minutes more. Set aside.

Mash or blend the warm sweet potato with the melted butter until smooth. A blender or hand mixer gives the silkiest filling.

Add the sweetened condensed milk, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until smooth and evenly combined, scraping the bowl as needed.

Reduce the oven to 350 degrees F. Pour the filling into the blind-baked crust and smooth the top. Cover the crust edge with foil or a pie shield if it is already golden.

Bake for 45-55 minutes, until the edges are set and the center has a gentle wobble. Do not bake until the center is fully firm.

Cool the pie at room temperature for 2 hours, then refrigerate at least 4 hours before slicing. Serve chilled or slightly cool with whipped cream if desired.
