Sweet Chili Glazed Salmon (Print Version)

# Ingredients:

01 - Sweet Thai chili sauce - 1/2 cup.
02 - Fresh lime juice - 2 tablespoons, plus extra for salad.
03 - Soy sauce - 2 teaspoons.
04 - Fresh ginger - 1 tablespoon, minced.
05 - Green onions - 1 bunch, sliced thin.
06 - Fresh salmon - 1 1/2 pounds, center cut.
07 - Sriracha sauce - 1 teaspoon.
08 - Mixed baby greens - 2 cups.
09 - Extra virgin olive oil - 1 tablespoon.
10 - Fresh cilantro leaves - from 2-3 sprigs.
11 - Fresh mint leaves - from 2-3 sprigs.
12 - Lime - 1 whole, cut for serving.
13 - Kosher salt - to taste.
14 - Black pepper - to taste.

# Instructions:

01 - Mix Thai chili sauce, lime juice, soy sauce and ginger in a bowl. Add half the sliced green onions and stir well.
02 - Pat salmon dry and check for bones. Season both sides with salt and pepper.
03 - Pour 1/3 cup sauce in baking dish. Place salmon in dish and coat with remaining sauce.
04 - Cook at 275°F for about 20 minutes until internal temperature reaches 130°F.
05 - Toss greens with olive oil, lime juice, salt and pepper in a bowl.
06 - Place greens on platter, top with salmon pieces. Garnish with herbs, remaining green onions and lime wedges.

# Notes:

01 - Center-cut salmon works best for even cooking.
02 - Can be prepared up to 2 hours ahead.
03 - Skin can be left on if preferred.
