Swedish Apple Cake (Print version)

A soft, buttery Swedish Apple Cake with sliced apples, cinnamon sugar, and a tender crumb made for coffee, dessert, or a quiet weekend bake.

# Ingredients:

For the cake

01 - 8 tablespoons (113 g) unsalted butter, melted and cooled slightly
02 - 2 large eggs
03 - 3/4 cup (150 g) granulated sugar
04 - 2 tablespoons (30 ml) whole milk
05 - 1 teaspoon vanilla extract
06 - 1 cup (125 g) all-purpose flour
07 - 1 teaspoon baking powder
08 - 1/4 teaspoon fine salt

For the apples and topping

09 - 2 medium tart apples, cored and thinly sliced
10 - 1 tablespoon granulated sugar or raw sugar
11 - 1 teaspoon ground cinnamon
12 - Powdered sugar, for serving, optional
13 - Whipped cream or vanilla sauce, for serving, optional

# Instructions:

01 - Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan or springform pan and line the bottom with parchment.
02 - Whisk the melted butter, eggs, sugar, milk, and vanilla in a medium bowl until smooth and glossy.
03 - Add the flour, baking powder, and salt. Fold gently just until the flour disappears. Do not beat the batter.
04 - Spread the batter in the prepared pan. Arrange the apple slices over the top in overlapping circles, pressing them lightly into the surface.
05 - Mix the sugar and cinnamon in a small bowl. Sprinkle it evenly over the apples.
06 - Bake for 35-40 minutes, until the top is golden, the center springs back lightly, and a tester inserted near the center comes out clean.
07 - Cool in the pan for 15-20 minutes, then remove the ring if using a springform pan. Dust with powdered sugar and serve warm or at room temperature.

# Good to know:

01 - Best served slightly warm or fully cooled with coffee.
02 - Use firm, tart apples for the cleanest flavor and best texture.
03 - Let the cake rest before slicing so the crumb sets.
