Street Fair Sausage Heroes (Print version)

Juicy Italian sausage heroes piled with soft peppers and onions on toasted rolls, made in one skillet with true street fair flavor.

# Ingredients:

For the sausage and peppers

01 - 1 tablespoon olive oil
02 - 4 raw Italian sausage links, sweet or hot, about 1 lb (450 g)
03 - 2 large bell peppers, mixed colors, sliced into strips
04 - 1 large yellow onion, sliced
05 - 3 garlic cloves, thinly sliced or minced
06 - 1 teaspoon Italian seasoning
07 - 1/2 teaspoon kosher salt, plus more to taste
08 - 1/4 teaspoon black pepper
09 - 1/4 cup (60 ml) water

For serving

10 - 4 sturdy hero rolls or hoagie rolls
11 - 1/2 cup (120 ml) warm marinara sauce, optional
12 - Pickled peppers or crushed red pepper, optional

# Instructions:

01 - Heat the olive oil in a large skillet over medium-high heat. Add the sausage links and brown on all sides, 6-8 minutes total. Transfer them to a plate.
02 - Add the bell peppers and onion to the same skillet. Season with Italian seasoning, salt, and black pepper. Cook for 8-10 minutes, stirring often, until softened and lightly browned.
03 - Stir in the garlic and cook for 30-60 seconds, just until fragrant. Do not let it brown hard or it can taste bitter.
04 - Return the sausage to the skillet and add the water. Cover, reduce heat to medium-low, and cook for 8-10 minutes, turning once, until the sausage reaches 160°F in the center.
05 - Move the sausage and peppers to one side or a plate. Toast the split rolls cut side down in the skillet for 1-2 minutes until lightly crisp.
06 - Place one sausage link in each roll. Top with peppers and onions, a spoonful of pan juices, and warm marinara or pickled peppers if using. Serve hot.

01 - Use sweet Italian sausage for a classic mild hero or hot Italian sausage for more heat.
02 - Best served right after assembly while the rolls are crisp.
03 - Cook raw pork sausage to 160°F in the center.
