Strawberry Shortcake Cheesecake Rolls (Print version)

Soft crepes rolled with fluffy cheesecake cream, fresh strawberries, and buttery shortcake crumbs, then chilled and sliced into pretty dessert rolls.

# Ingredients:

For the rolls

01 - 6 large prepared crepes, about 8 inches wide

For the strawberries

02 - 1 1/2 cups (225 g) fresh strawberries, hulled and finely diced
03 - 1 teaspoon granulated sugar
04 - 1 teaspoon finely grated lemon zest

For the cheesecake filling

05 - 8 oz (225 g) full-fat cream cheese, softened
06 - 1/3 cup (40 g) powdered sugar, plus more for serving
07 - 1 teaspoon vanilla extract
08 - 1/8 teaspoon fine salt
09 - 3/4 cup (180 ml) cold heavy whipping cream

For the shortcake crumbs

10 - 3/4 cup (75 g) finely crushed shortbread cookies or vanilla wafers
11 - 2 tablespoons (28 g) unsalted butter, melted

For serving

12 - Extra diced strawberries
13 - Small fresh mint leaves, optional

# Instructions:

01 - Toss the diced strawberries with granulated sugar and lemon zest. Let them stand for 10 minutes, then drain off excess juice and blot lightly if needed.
02 - Stir the crushed shortbread cookies with melted butter until evenly moistened. Set aside 2 tablespoons for inside the rolls and keep the rest for coating.
03 - In a medium bowl, beat the softened cream cheese with powdered sugar, vanilla, and salt until smooth and creamy, about 1-2 minutes.
04 - In a separate cold bowl, whip the heavy cream to firm peaks. Fold the whipped cream into the cream cheese mixture until no streaks remain.
05 - Lay the crepes flat. Spread about 1/3 cup cheesecake filling over each one, leaving a 1/2-inch border. Scatter strawberries and a small pinch of crumbs over the filling.
06 - Roll each crepe into a snug log without squeezing. Wrap each log in plastic wrap and refrigerate for at least 90 minutes, or up to 24 hours.
07 - Unwrap the chilled logs and trim the ends. Slice into 1-inch pieces with a sharp knife, wiping the blade between cuts. Press the cut edges into the remaining crumbs and garnish with powdered sugar, strawberries, and mint.
