Refreshing Strawberry Piña Colada Smoothie (Print version)

A creamy strawberry piña colada smoothie made with frozen fruit, coconut milk, banana, and lime for a quick tropical drink.

# Ingredients:

For the smoothie

01 - 3/4 cup (180 ml) light coconut milk, plus more as needed
02 - 1/2 cup (120 ml) pineapple juice or coconut water
03 - 1 small ripe banana, sliced
04 - 1 1/2 cups (225 g) frozen strawberries
05 - 1 cup (165 g) frozen pineapple chunks
06 - 1 tablespoon fresh lime juice
07 - 1 pinch fine salt
08 - 1-2 teaspoons maple syrup, optional
09 - 1/2 cup ice, optional for a frostier texture

For serving

10 - 1 tablespoon unsweetened shredded coconut
11 - Fresh strawberry slices and pineapple wedges, optional

# Instructions:

01 - Pour the coconut milk and pineapple juice or coconut water into the blender first so the blades can move easily.
02 - Add the banana, frozen strawberries, frozen pineapple, lime juice, salt, and maple syrup if using.
03 - Blend on low for 10 seconds, then increase to high and blend until completely smooth and thick, about 45-60 seconds. Scrape the sides if needed.
04 - Add more coconut milk 1 tablespoon at a time if the smoothie is too thick. Add ice for a frostier drink. Pour into chilled glasses and garnish with coconut, strawberries, and pineapple.

# Good to know:

01 - Best served right after blending.
02 - Freeze leftovers in ice cube trays and re-blend with coconut milk.
03 - Use frozen fruit for the thickest texture.
