Easy Strawberry Ice Cream Float with Fresh Berries (Print version)

A creamy, fizzy strawberry ice cream float layered with fresh berries, strawberry ice cream, and chilled lemon-lime soda.

# Ingredients:

For the berry base

01 - 2 cups (300 g) fresh strawberries, hulled and sliced
02 - 1/2 cup (75 g) mixed fresh berries, such as raspberries, blueberries, or blackberries
03 - 1 tablespoon granulated sugar
04 - 1 tablespoon fresh lemon juice

For the floats

05 - 8 scoops strawberry ice cream, about 1 quart (950 ml)
06 - 3 cups (720 ml) chilled lemon-lime soda, strawberry soda, or sparkling water
07 - 1/2 cup (120 ml) whipped cream, optional
08 - Extra fresh berries, for topping
09 - Fresh mint leaves, optional

# Instructions:

01 - Add the sliced strawberries, sugar, and lemon juice to a small bowl. Mash about half of the berries with a fork until juicy, then fold in the mixed berries.
02 - Place 4 tall glasses in the freezer for 5 minutes if time allows. This helps the ice cream melt more slowly.
03 - Divide the berry mixture among the glasses. Add 2 scoops of strawberry ice cream to each glass.
04 - Slowly pour about 3/4 cup chilled soda into each glass. Top with whipped cream, extra berries, and mint if using. Serve immediately.

01 - Best served immediately after the soda is poured.
02 - Use chilled soda and cold glasses for the highest foam.
03 - Berry mixture can be made up to 4 hours ahead and refrigerated.
