Strawberry Goat Cheese Crostini with Balsamic Glaze (Print version)

Crisp toasted baguette topped with creamy goat cheese, juicy strawberries, fresh basil, and glossy balsamic glaze.

# Ingredients:

For the crostini

01 - 1 small baguette, sliced into 12 pieces about 1/2 inch thick
02 - 2 tablespoons olive oil
03 - 1/4 teaspoon kosher salt

For the strawberry topping

04 - 2 cups (300 g) fresh strawberries, hulled and thinly sliced
05 - 1 teaspoon honey, plus more if needed
06 - 1 teaspoon fresh lemon juice
07 - Pinch of kosher salt
08 - Freshly ground black pepper

For assembling

09 - 6 oz (170 g) soft goat cheese, at room temperature
10 - 2 tablespoons thinly sliced fresh basil
11 - 3 tablespoons balsamic glaze, for drizzling

# Instructions:

01 - Preheat the oven to 425°F. Arrange the baguette slices on a baking sheet in a single layer.
02 - In a bowl, toss the sliced strawberries with honey, lemon juice, a pinch of salt, and a little black pepper. Let them sit for 10 minutes while you toast the bread.
03 - Brush both sides of the baguette slices lightly with olive oil and sprinkle with kosher salt. Bake for 5-7 minutes, turning once if needed, until golden and crisp.
04 - Let the toast cool for 3-5 minutes. Spread each slice with a generous layer of softened goat cheese.
05 - Top each crostini with a few strawberry slices, leaving extra juice behind in the bowl. Sprinkle with basil and drizzle lightly with balsamic glaze. Serve right away.

# Good to know:

01 - Cook time assumes prepared balsamic glaze. If reducing balsamic vinegar yourself, add about 10 minutes.
02 - Best assembled within 30 minutes of serving for crisp toast.
