In a large bowl, combine the cream cheese, sour cream, and sugar. Mix until smooth. Gently fold in the chopped strawberries.

Lay a tortilla flat and place a scoop of the strawberry cream cheese mixture in the center. Fold in the sides and roll it up like a burrito. Tip: Spread a small amount of the cream cheese mixture along the edge of the tortilla to seal it.

Place the strawberry cheesecake burritos in the air fryer. Cook the chimichangas at 350°F (175°C) for 10-12 minutes.

Once cooked, remove them from the air fryer and brush each one with melted butter. Combine the granulated sugar and ground cinnamon in a shallow plate. Roll the chimichangas in the cinnamon sugar mixture until fully coated.
