Healthy Baby-Friendly Strawberry Muffins (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1/2 cup mashed very ripe banana (1 medium)
02 - 1 large egg
03 - 2 tablespoons melted butter or coconut oil
04 - 1/4 cup plain Greek yogurt
05 - 1/2 teaspoon vanilla

→ Dry Ingredients

06 - 3/4 cup white whole wheat flour (or all purpose)
07 - 1/2 teaspoon aluminum-free baking powder
08 - 1/4 teaspoon baking soda
09 - Pinch of salt (optional)

→ Fruit

10 - 1/2 cup strawberries, finely chopped (about 1/4 inch pieces)

# Instructions:

01 - Preheat oven to 350°F. Line mini muffin pan with paper liners or use silicone pan, and lightly spray with oil to prevent sticking.
02 - In a large bowl, thoroughly mash banana until no lumps remain. Whisk in egg, melted butter, yogurt, and vanilla until well combined.
03 - Gently stir in flour, baking powder, baking soda, and salt (if using) just until flour streaks disappear. Be careful not to overmix.
04 - Fold in finely chopped strawberries. Spoon 1 tablespoon of batter into each prepared muffin cup. Bake 11-15 minutes until a toothpick inserted comes out clean. Cool in pan 5-10 minutes before removing.
