Stir-fried Potatoes Minced Meat (Print Version)

Golden potatoes and tender minced meat stir-fried with bell peppers in a rich, savory sauce.

# Ingredients:

→ Main

01 - 450 g potatoes, peeled and cut into 2.5 cm cubes
02 - 225 g ground pork or beef
03 - 80 g green bell pepper, thinly sliced

→ Sauce

04 - 30 ml soy sauce
05 - 15 ml oyster sauce
06 - 8 g cornstarch

→ Aromatics and Oils

07 - 15 ml vegetable oil
08 - 5 ml sesame oil
09 - 1 clove garlic, minced
10 - 2.5 cm piece fresh ginger, minced

→ Seasonings

11 - Salt, to taste
12 - Black pepper, to taste

# Instructions:

01 - Bring a pot of salted water to a boil. Add the potato cubes and simmer for 5–7 minutes until just tender but not fully cooked. Drain well and set aside.
02 - Heat vegetable oil in a wok or large skillet over medium-high heat. Add the ground pork or beef and cook, stirring frequently, until evenly browned. Drain off excess fat.
03 - Stir in minced garlic and ginger. Cook for 30 seconds until aromatic.
04 - Add the drained, parboiled potatoes to the wok. Stir-fry for approximately 5 minutes until lightly golden.
05 - Add sliced green bell peppers. Stir-fry for an additional 2 minutes until just softened.
06 - In a small bowl, blend soy sauce, oyster sauce, and cornstarch until smooth. Pour the mixture over the potato and meat medley.
07 - Stir-fry for 1–2 minutes until the sauce thickens and everything is evenly coated. Drizzle with sesame oil. Adjust seasoning with salt and black pepper to taste. Serve hot.
