Stir-fried Bok Choy Ground Meat (Print Version)

Crisp bok choy and seasoned ground meat quickly stir-fried with soy, garlic, and ginger for bold flavor.

# Ingredients:

01 - 450 g lean ground pork or ground turkey
02 - 1 tablespoon canola oil or olive oil
03 - 2 cloves garlic, finely minced
04 - 2.5 cm piece fresh ginger, finely minced
05 - 1 tablespoon low-sodium soy sauce
06 - 0.5 tablespoon oyster sauce or low-sugar hoisin sauce
07 - 0.5 tablespoon rice vinegar or fresh lemon juice (optional)
08 - 1 teaspoon erythritol or monk fruit sweetener (optional)
09 - 0.5 teaspoon ground black pepper
10 - 1 head (about 300 g) fresh bok choy, roughly chopped
11 - 1 teaspoon sesame oil (optional)

# Instructions:

01 - Heat canola or olive oil in a large skillet or wok over medium-high heat. Add ground pork or turkey and cook, stirring frequently, until evenly browned and cooked through.
02 - Incorporate minced garlic and ginger into the pan. Stir-fry for 1 minute until fragrant without browning.
03 - Pour in soy sauce, oyster sauce (or hoisin), rice vinegar or lemon juice (if using), sweetener (if using), and black pepper. Mix well and allow to cook for an additional minute.
04 - Add chopped bok choy to the skillet. Stir-fry for 2 to 3 minutes, turning frequently, until the leaves are wilted and the stems are tender but retain a slight crunch.
05 - Remove from heat, drizzle with sesame oil (if desired), and serve immediately while hot.

# Notes:

01 - Do not overcook bok choy to preserve its crisp texture and vibrant color.
