Steak Shrimp Loaded Baked Potato (Print Version)

Fluffy baked potatoes topped with juicy steak, shrimp, sautéed veggies, and creamy cheese sauce.

# Ingredients:

→ Potatoes

01 - 4 jumbo baking potatoes
02 - 2 tablespoons olive oil
03 - 1 teaspoon sea salt
04 - 1/2 teaspoon black pepper

→ Steak

05 - 300 grams sirloin steak, cut into bite-sized pieces
06 - 1/2 teaspoon sea salt
07 - 1/4 teaspoon black pepper
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon chili powder
10 - 1 tablespoon olive oil

→ Shrimp

11 - 200 grams raw shrimp, tails removed, deveined
12 - 1 tablespoon olive oil
13 - 1 teaspoon seafood seasoning

→ Sautéed Vegetables

14 - 150 grams mixed bell peppers, thinly sliced
15 - 1 small onion, thinly sliced
16 - 1 tablespoon olive oil
17 - 1/2 teaspoon sea salt
18 - 1/4 teaspoon black pepper
19 - 1/2 teaspoon garlic powder

→ Cheese Sauce

20 - 375 millilitres heavy cream
21 - 50 grams freshly grated Parmesan cheese
22 - 1 tablespoon garlic powder
23 - 1/4 teaspoon sea salt
24 - 1/4 teaspoon black pepper
25 - 1/2 teaspoon Cajun seasoning
26 - 1/2 teaspoon dried Italian herb mix

# Instructions:

01 - Preheat oven to 230°C. Rub baking potatoes with olive oil, salt, and pepper. Arrange on a baking tray and cook for 75 minutes, or until fork tender. Slice each potato lengthwise down the centre.
02 - Toss steak pieces with salt, pepper, garlic powder, and chili powder. Heat olive oil in a cast iron skillet over medium-high heat; sear steak for 1 minute per side until browned and just cooked through. Remove from heat.
03 - Combine shrimp with olive oil and seafood seasoning. In the same skillet over medium-high heat, cook shrimp for 2 to 3 minutes per side until they curl into a firm 'C' shape and turn opaque.
04 - Heat olive oil in a separate pan over medium-high heat. Add bell peppers and onion; season with salt, pepper, and garlic powder. Sauté for 5 to 7 minutes until vegetables are softened.
05 - Place heavy cream in a saucepan over medium heat. Once it begins to bubble, whisk in Parmesan cheese, garlic powder, salt, pepper, Cajun seasoning, and Italian herbs. Stir until cheese melts and sauce thickens slightly.
06 - Gently fluff the centres of baked potatoes with a fork. Top each potato evenly with sautéed vegetables, steak, shrimp, and a generous drizzle of cheese sauce. Serve immediately.
