Tender sliced steak and crisp broccoli tossed in a glossy garlic ginger sauce for a fast, takeout-style skillet dinner.

# Ingredients:

For the steak

01 - 1 lb (450 g) flank steak or sirloin, sliced 1/4 inch thick across the grain
02 - 1 tablespoon low-sodium soy sauce
03 - 1 tablespoon cornstarch
04 - 1 tablespoon neutral oil

For the sauce

05 - 1/2 cup (120 ml) low-sodium beef broth
06 - 3 tablespoons oyster sauce
07 - 2 tablespoons low-sodium soy sauce
08 - 1 tablespoon brown sugar
09 - 1 teaspoon cornstarch
10 - 1 teaspoon toasted sesame oil
11 - 1/4 teaspoon black pepper

For the stir-fry

12 - 1 tablespoon neutral oil, plus more if needed
13 - 5 cups (350 g) broccoli florets
14 - 2 tablespoons water
15 - 3 cloves garlic, minced
16 - 1 tablespoon fresh ginger, minced
17 - 2 green onions, sliced
18 - Cooked rice, for serving, optional

# Instructions:

01 - Toss the sliced steak with soy sauce, cornstarch, and 1 tablespoon oil. Let it sit for 10 minutes while you mix the sauce and cut the broccoli.
02 - In a small bowl, whisk beef broth, oyster sauce, soy sauce, brown sugar, cornstarch, sesame oil, and black pepper until smooth.
03 - Heat 1 tablespoon neutral oil in a large skillet or wok over medium-high heat. Add the steak in one layer and sear for 60-90 seconds per side until browned. Transfer to a plate.
04 - Add broccoli and 2 tablespoons water to the skillet. Cover and cook for 2-3 minutes until bright green and crisp-tender.
05 - Uncover the skillet. Add garlic and ginger and stir for 30 seconds until fragrant.
06 - Pour in the sauce and return the steak with any juices. Toss for 1-2 minutes until the sauce thickens and coats the beef and broccoli. Top with green onions and serve with rice if desired.

# Good to know:

01 - Slice steak across the grain for the most tender texture.
02 - Cook beef in batches if your skillet is crowded.
03 - Best served right after cooking while the broccoli is crisp-tender.
