In a small pan, heat water and allulose or sugar with sliced jalapenos over medium-low heat until the sugar dissolves, about 5 minutes. Strain the jalapeno mixture into a jar, cover, and cool. You can choose to add the jalapenos back into the drink for extra spice or discard them.

In a cocktail shaker, combine pickle juice, non-alcoholic tequila (or regular tequila for a cocktail), lime juice, and jalapeno simple syrup. Shake the mixture thoroughly for about 20 seconds to ensure the ingredients are well incorporated.

Moisten the rim of your glass with chamoy and dip it into Tajin or salt to give the drink a seasoned, spicy rim.

Pour the mixture from the shaker into the prepared glass over ice. Add a splash of sparkling water to finish.

Garnish the drink with gherkin pickles and serve chilled. Adjust the spiciness to your taste by adding more jalapeno slices if desired.
