Spicy Patty Melt on Texas Toast (Print version)

A crispy Texas toast patty melt stacked with seared beef, caramelized onions, charred jalapeños, peppery cheese, and smoky spicy sauce.

# Ingredients:

For the spicy sauce

01 - 1/2 cup (115 g) mayonnaise
02 - 1 tablespoon ketchup
03 - 1 tablespoon yellow mustard
04 - 1 tablespoon sweet pickle relish
05 - 1 chipotle pepper in adobo, finely chopped
06 - 1 teaspoon adobo sauce from the can
07 - 1 teaspoon apple cider vinegar
08 - 1/2 teaspoon garlic powder
09 - 1/2 teaspoon smoked paprika
10 - 1/8 teaspoon cayenne pepper, optional

For the onions and jalapeños

11 - 2 tablespoons unsalted butter, divided
12 - 1 tablespoon neutral oil
13 - 2 large yellow onions, thinly sliced
14 - 1/2 teaspoon kosher salt
15 - 2 fresh jalapeños, thinly sliced

For the patty melts

16 - 1 1/2 lb (680 g) 80/20 ground beef
17 - 1 1/2 teaspoons kosher salt
18 - 1 teaspoon black pepper
19 - 1 teaspoon Worcestershire sauce
20 - 8 slices Texas toast
21 - 4 tablespoons unsalted butter, softened
22 - 4 slices pepper jack cheese
23 - 4 slices Colby jack cheese

# Instructions:

01 - Stir together the mayonnaise, ketchup, mustard, relish, chipotle, adobo sauce, vinegar, garlic powder, smoked paprika, and cayenne. Refrigerate while you cook the onions and beef.
02 - Heat 1 tablespoon butter and the oil in a large skillet over medium heat. Add the onions and kosher salt. Cook for 18-22 minutes, stirring often, until soft, golden, and sweet.
03 - Push the onions to a plate. Add the jalapeños to the same skillet and cook for 3-4 minutes until blistered and softened. Move them to the plate with the onions.
04 - Mix the beef gently with salt, pepper, and Worcestershire sauce. Divide into 4 portions and shape into wide, thin rectangles slightly larger than the Texas toast slices.
05 - Heat the skillet or griddle over medium-high heat. Cook the patties for 3-4 minutes per side, until browned and the center reaches 160°F. Add one slice pepper jack and one slice Colby jack to each patty during the last minute.
06 - Spread softened butter on one side of each Texas toast slice. Toast buttered-side down on medium heat until deep golden, 2-3 minutes. Work in batches if needed.
07 - Spread sauce on the untoasted side of each bread slice. Layer jalapeños, a cheesy beef patty, caramelized onions, and a second slice of toast. Return to the skillet and press gently for 1-2 minutes per side until crisp and hot.
