Crispy Spicy Mexican Corn Bites (Print Version)

# Ingredients:

→ Base Sauce

01 - 1/4 cup mayonnaise
02 - 1/4 cup sour cream
03 - 1 tablespoon fresh lime juice

→ Main & Seasonings

04 - 2 cups corn kernels (fresh, frozen, or canned - your choice!)
05 - 1 teaspoon chili powder, adjust to your heat preference
06 - 1/2 teaspoon smoked paprika
07 - 1/2 teaspoon ground cumin
08 - 1/4 teaspoon cayenne pepper (skip if you can't handle the heat!)

# Instructions:

01 - In a large bowl, combine your mayonnaise, sour cream, and lime juice until you've got a smooth, creamy mixture.
02 - Add those corn kernels to your creamy mixture and give everything a good stir until each kernel is nicely coated.
03 - Now sprinkle in the chili powder, smoked paprika, cumin, and cayenne (if you're using it). Mix until all those spices are evenly spread throughout.
04 - Get your non-stick skillet warming up over medium heat.
05 - Drop spoonfuls of your corn mixture into the hot skillet to make little bite-sized rounds. Let them cook for 2-3 minutes on each side until they're golden brown with crispy edges.
06 - Transfer to a serving plate and get creative with your toppings - try some fresh cilantro, crumbled queso fresco, or an extra sprinkle of chili powder.
