Easy Spicy Garlic Bok Choy (Print Version)

# Ingredients:

→ Main

01 - 1 lb baby bok choy (or regular bok choy, yu choy sum, baby gai-lan, cabbage)
02 - 1 tablespoon vegetable oil or other neutral oil
03 - 8 cloves garlic, minced
04 - ⅓ cup water

→ Spicy Sauce

05 - 1.5 tablespoons chili oil or chili crisp in oil
06 - 1 tablespoon regular soy sauce
07 - ½ tablespoon Shaoxing wine (or dry sherry wine or chicken broth)
08 - 1 teaspoon sesame oil
09 - ¼ teaspoon white sugar

# Instructions:

01 - Slice baby bok choy into halves. Rinse in cold water until clean and drain well.
02 - Combine all spicy sauce ingredients in a small bowl and set aside.
03 - Heat vegetable oil in large pan on low-medium heat. Sauté minced garlic for 10 seconds until fragrant.
04 - Increase heat to medium-high. Add bok choy and water. Stir fry until softened, about 2-4 minutes.
05 - Pour sauce over vegetables, toss to combine, then remove from heat and serve.

# Notes:

01 - Can substitute other Asian greens for bok choy
02 - Use chicken broth instead of wine for non-alcoholic version
03 - Adjust chili oil amount for desired spice level
