Spicy Beef Stir Fry (Print Version)

01 - 1 pound beef top sirloin steak, cut into thin strips
02 - 1 tablespoon minced fresh gingerroot
03 - 3 garlic cloves, minced, divided
04 - 1/4 teaspoon pepper
05 - 3/4 teaspoon salt, divided

→ Sauce

06 - 1 cup light coconut milk
07 - 2 tablespoons sugar
08 - 1 tablespoon Sriracha chili sauce
09 - 1/2 teaspoon grated lime zest
10 - 2 tablespoons lime juice

→ Vegetables and Garnishes

11 - 2 tablespoons canola oil, divided
12 - 1 large sweet red pepper, cut into thin strips
13 - 1/2 medium red onion, thinly sliced
14 - 1 jalapeno pepper, seeded and thinly sliced
15 - 4 cups fresh baby spinach
16 - 2 green onions, thinly sliced
17 - 2 tablespoons chopped fresh cilantro

# Instructions:

01 - In a large bowl, toss beef with ginger, 2 minced garlic cloves, pepper, and 1/2 teaspoon salt; let stand for 15 minutes.
02 - In a small bowl, whisk together coconut milk, sugar, chili sauce, lime zest, lime juice, and the remaining 1/4 teaspoon salt until blended.
03 - In a large skillet, heat 1 tablespoon oil over medium-high heat. Add marinated beef and stir-fry until no longer pink, approximately 2-3 minutes. Remove beef from the pan and set aside.
04 - In the same skillet, stir-fry red pepper, red onion, jalapeno, and the remaining clove of minced garlic in the remaining 1 tablespoon oil. Cook just until the vegetables are crisp-tender, about 2-3 minutes.
05 - Stir in the prepared coconut milk mixture and heat through. Add the spinach and cooked beef to the skillet and cook until the spinach is wilted and the beef is warmed through, stirring occasionally. Sprinkle with green onions and cilantro before serving.
