Sparkling Cranberry Cookies (Print Version)

# Ingredients:

01 - 1 1/2 cups frozen cranberries.
02 - 1 teaspoon orange zest.
03 - 1/4 cup orange juice.
04 - 2/3 cup unsalted butter.
05 - 2/3 cup granulated sugar.
06 - 2 cups all-purpose flour.
07 - 1 teaspoon baking powder.
08 - 1/4 teaspoon salt.
09 - 1/2 cup dried cranberries.
10 - Extra sugar for rolling.

# Instructions:

01 - Let frozen cranberries defrost until soft and juicy, several hours or overnight.
02 - Blend thawed cranberries, their juice, orange juice and zest until smooth. Measure 2/3 cup.
03 - Whip butter and sugar until light and fluffy.
04 - Add cranberry mixture to butter, whip until fully emulsified.
05 - Mix in flour, baking powder and salt on low speed. Stir in dried cranberries.
06 - Cover and refrigerate dough until stiff, at least 30 minutes.
07 - Form into balls and roll in sugar.
08 - Bake at 400°F for 8-10 minutes until edges are lightly golden.

# Notes:

01 - Longer thawing gives better flavor.
02 - Must chill dough until firm.
03 - Can use sparkling sugar for extra festive look.
