03 - 0.5 teaspoon baking soda
04 - 0.5 teaspoon salt
05 - 113 grams unsalted butter, cold and cubed
06 - 180 milliliters buttermilk

07 - 8 cooked breakfast sausage links or patties

→ To Serve

08 - Honey or maple syrup, optional

# Instructions:

01 - Whisk together the flour, baking powder, baking soda, and salt in a large mixing bowl.
02 - Cut in cold cubed butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
03 - Pour in the buttermilk and gently stir until a soft dough forms; avoid overmixing.
04 - Transfer dough to a lightly floured surface and roll out to 1.25 cm thickness.
05 - Cut dough into 8 equal pieces shaped to wrap each sausage. Place a cooked sausage on each portion and enclose, pinching edges to seal.
06 - Preheat oven to 220°C and line a baking sheet with parchment paper. Arrange the wrapped sausages seam-side down on the tray.
07 - Bake for 15 to 18 minutes, or until biscuits are golden brown.
08 - Serve warm, plain or drizzled with honey or maple syrup as desired.

# Notes:

01 - Ensure butter stays cold for optimal flakiness in the biscuit dough.
