Southern Peach Bread Loaf (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 250 grams all-purpose flour
02 - 100 grams granulated sugar
03 - 50 grams light brown sugar
04 - 2 teaspoons baking powder
05 - 0.5 teaspoon baking soda
06 - 1 teaspoon ground cinnamon
07 - 0.5 teaspoon fine salt

→ Wet Ingredients

08 - 2 large eggs
09 - 120 millilitres milk
10 - 80 millilitres vegetable oil
11 - 1 teaspoon vanilla extract

→ Fruit

12 - 2 medium ripe peaches, diced

# Instructions:

01 - Preheat oven to 175°C and grease a standard loaf tin thoroughly.
02 - Dice fresh peaches into small even pieces and reserve.
03 - In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt until homogenous.
04 - In a separate bowl, beat eggs lightly, then add milk, vegetable oil, and vanilla extract, whisking until fully blended.
05 - Gradually incorporate the wet mixture into the dry ingredients, stirring gently until batter is just combined; avoid over-mixing.
06 - Gently fold the diced peaches into the batter to distribute evenly without crushing the fruit.
07 - Pour batter evenly into the prepared loaf tin and smooth the surface.
08 - Bake for 50 to 60 minutes, or until a skewer inserted into the centre emerges clean.
09 - Allow loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
