Smoked Sausage and Rice Dinner (Print Version)

Enjoy smoked sausage with soft rice, veggies and paprika for a satisfying one-pan meal.

# Ingredients:

→ Main Components

01 - 3 tablespoons extra virgin olive oil
02 - 5 garlic cloves, finely minced
03 - 2 medium onions, chopped
04 - 1 yellow capsicum, diced into 1.5 cm squares
05 - 1 red capsicum, diced into 1.5 cm squares
06 - 400 grams smoked sausages such as kransky, sliced 0.5 cm thick

→ Seasonings

07 - 0.75 teaspoon salt
08 - 0.5 teaspoon black pepper
09 - 0.75 teaspoon smoked paprika

→ Rice and Liquids

10 - 1.5 cups uncooked long grain white rice
11 - 2.5 cups low sodium chicken stock

→ Vegetables and Garnish

12 - 2 cups frozen peas, thawed
13 - 2 tablespoons chopped fresh parsley (optional)

# Instructions:

01 - Heat 2 tablespoons olive oil in a large heavy-based pot over medium-high heat. Add smoked sausage slices and cook until golden brown. Remove sausage with a slotted spoon and set aside.
02 - Add the remaining 1 tablespoon olive oil to the pot. Add minced garlic and chopped onion; cook for 2 minutes. Add yellow and red capsicum and continue cooking for another 2 minutes until onion is translucent.
03 - Incorporate uncooked rice, chicken stock, smoked paprika, salt, black pepper, and reserved sausage into the pot. Stir thoroughly and bring the mixture to a boil, then reduce heat to low to maintain a gentle simmer.
04 - Cover the pot with a lid and cook on low heat for 20 minutes, ensuring a very gentle simmer.
05 - Remove the pot from the stove. Quickly lift the lid, add thawed peas, and promptly cover again. Let the mixture rest for 10 minutes off the heat to allow the residual warmth to steam the peas.
06 - Add chopped parsley. Fluff the rice gently with a fork before serving.

# Notes:

01 - Smoked sausages impart robust flavour to the dish, but raw sausages may be substituted by cutting into small chunks and browning thoroughly.
02 - Long grain white rice offers the ideal separate grains for this method; if substituting jasmine rice, reduce the liquid by approximately 60 ml.
03 - No rinsing is required for packaged rice, but if rinsed, reduce stock to compensate for moisture retained.
