Smoked Sausage Potatoes Skillet (Print Version)

Tuck into pan-seared potatoes, juicy smoked sausage, and soft veggies for a down-home skillet meal.

# Ingredients:

01 - 2 tbsp olive oil
02 - 1 lb smoked sausage, sliced into coins
03 - 4 medium russet potatoes, cut into small cubes
04 - 1 small onion, diced
05 - 1 red bell pepper, diced
06 - 2 cloves garlic, finely chopped
07 - 1 tsp smoked paprika
08 - 1/2 tsp garlic powder
09 - Salt and pepper as you like
10 - 2 tbsp chopped parsley for sprinkling on top
11 - Optional: sprinkle with shredded cheddar or add a splash of hot sauce before eating

# Instructions:

01 - Heat 1 tbsp olive oil in a big skillet on medium. Drop in your potato cubes, sprinkle with some salt, black pepper, garlic powder, and smoked paprika. Stir now and then for about 10-12 minutes. Once the potatoes look caramelized and you can poke through them easily, take them out and set aside.
02 - Splash in the last bit of olive oil in the same pan. Toss in those sausage slices next. Cook them for 3-4 minutes so they get a crispy edge. Now add diced onion, garlic, and bell pepper. Let it all hang out together for another 5-7 minutes, stirring, until things get a bit browned and soft.
03 - Tip your cooked potatoes back into the pan. Give it all a good mix. Let it warm for 2-3 minutes until hot and everything is cozy and blended.
04 - Sprinkle chopped parsley over the top and dig in while it’s piping hot! Add cheddar or hot sauce if you want more zip.
