Smoked Salmon Bisque (Print Version)

# Ingredients:

01 - 1/4 cup butter.
02 - 1/2 chopped medium yellow onion.
03 - 1 cup thinly sliced leeks.
04 - 1 cup thinly sliced mushrooms.
05 - 1 tablespoon minced garlic.
06 - 1 quart clam juice.
07 - 2 to 4 ounces hot smoked salmon.
08 - 2 cups canned whole tomatoes.
09 - 2 tablespoons fresh parsley.
10 - 1/4 cup fresh cilantro.
11 - 2 tablespoons fresh dill.
12 - Pinch black pepper.
13 - Pinch crushed red pepper.
14 - 1/2 teaspoon Old Bay seasoning.
15 - 3 tablespoons all-purpose flour.
16 - 1 cup milk.
17 - 1 cup cream.
18 - 3/4 pound salmon fillet.

# Instructions:

01 - Melt butter and cook onions, leeks, mushrooms, and garlic until soft, 7-10 minutes.
02 - Stir in clam juice, smoked salmon, tomatoes, herbs, and seasonings. Heat through.
03 - Whisk flour with milk until smooth. Add cream, then stir into soup.
04 - Add fresh salmon and simmer 5 minutes. Don't let boil after adding dairy.
05 - Optional: blend soup to desired smoothness. Season with salt and garnish with dill.

01 - Use hot-smoked salmon for stronger flavor.
