Slow Cooker Lipton Onion Potatoes (Print version)

Tender slow cooker potatoes tossed with Lipton onion soup mix, butter, garlic, and parsley for an easy savory side.

# Ingredients:

For the potatoes

01 - 3 lb (1.36 kg) Yukon Gold potatoes, scrubbed and cut into 1 1/2-inch chunks
02 - 1 packet (1 oz or 28 g) Lipton Recipe Secrets onion soup mix
03 - 4 tablespoons (56 g) unsalted butter, melted
04 - 2 tablespoons olive oil
05 - 1 teaspoon garlic powder
06 - 1/2 teaspoon black pepper

For finishing

07 - 2 tablespoons chopped fresh parsley or chives
08 - 1 teaspoon lemon juice, optional

# Instructions:

01 - Scrub the potatoes well and cut them into even 1 1/2-inch chunks. Leave the skins on for better texture.
02 - Lightly grease a 5- to 6-quart slow cooker. Add the potatoes, onion soup mix, melted butter, olive oil, garlic powder, and black pepper.
03 - Stir until the potatoes are evenly coated and no dry pockets of soup mix remain. Spread the potatoes into an even layer.
04 - Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are fork-tender. Stir once halfway through if possible.
05 - Stir gently, then add parsley or chives. Taste before adding any salt. Add lemon juice if you want a brighter finish and serve warm.

# Good to know:

01 - Best with Yukon Gold or red potatoes because they hold their shape in the slow cooker.
02 - The onion soup mix is salty, so taste before adding extra salt.
03 - For browned edges, broil the cooked potatoes on a sheet pan for 3-5 minutes.
