Slow Cooker Cube Steak (Print version)

Fork-tender cube steak cooked low and slow in a creamy mushroom onion gravy, made for cozy family dinners.

# Ingredients:

For the cube steak

01 - 2 lb (900 g) beef cube steaks, about 6 pieces
02 - 1/2 cup (65 g) all-purpose flour
03 - 1 teaspoon kosher salt, divided
04 - 1/2 teaspoon black pepper, divided
05 - 2 tablespoons olive oil

For the mushroom gravy

06 - 1 large yellow onion, thinly sliced
07 - 8 oz (225 g) cremini or white mushrooms, sliced
08 - 1 can (10.5 oz / 298 g) condensed cream of mushroom soup
09 - 1 cup (240 ml) low-sodium beef broth
10 - 1 packet (1 oz / 28 g) dry onion soup mix
11 - 1 tablespoon Worcestershire sauce
12 - 1/2 teaspoon garlic powder
13 - 1/2 teaspoon dried thyme
14 - 1 tablespoon cornstarch mixed with 2 tablespoons cold water

For serving

15 - Mashed potatoes, egg noodles, or rice, optional
16 - Chopped parsley, optional

# Instructions:

01 - Pat the cube steaks dry. In a shallow dish, mix the flour with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Dredge the steaks lightly and shake off excess flour.
02 - Heat the olive oil in a large skillet over medium-high heat. Brown the cube steaks for about 2 minutes per side, working in batches if needed. Transfer them to the slow cooker.
03 - Scatter the sliced onion and mushrooms around and over the browned steaks in the slow cooker.
04 - In a bowl, whisk the cream of mushroom soup, beef broth, onion soup mix, Worcestershire sauce, garlic powder, thyme, remaining salt, and remaining pepper until mostly smooth.
05 - Pour the gravy mixture over the steaks. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the steak is fork-tender.
06 - Stir the cornstarch and cold water together, then gently stir the slurry into the slow cooker gravy. Cover and cook on high for 15-20 minutes, until the gravy thickens.
07 - Taste the gravy and adjust seasoning only if needed. Serve the cube steak and mushroom gravy over mashed potatoes, egg noodles, or rice, with parsley if you like.
