Peel, core, and cut the apples into wedges about 1 inch (2.5 cm) thick. Keep them uniform in size so they cook evenly.

In a small bowl, whisk together the brown sugar, cornstarch, cinnamon, nutmeg, and salt until fully combined.

Add the apple wedges to the slow cooker insert. Sprinkle the sugar mixture over the top and toss to coat as evenly as possible. Scatter the butter pieces over the surface.

Cover and cook on LOW for 3 to 4 hours, stirring once gently at the halfway point. The apples are done when fork-tender and the sauce is thick and glossy.
