Delicious Slow Cooker Broccoli Beef (Print version)

# Ingredients:

For the slow cooker

01 - 2 lbs (900 g) boneless beef chuck roast, thinly sliced against the grain
02 - 1 cup low-sodium beef broth
03 - 1/4 cup low-sodium soy sauce
04 - 1/4 cup oyster sauce
05 - 1/4 cup packed light brown sugar
06 - 1 tablespoon toasted sesame oil
07 - 4 cloves garlic, minced
08 - 1/2 teaspoon ground ginger (optional)

To finish

09 - 5 cups fresh broccoli florets (about 2 small crowns)
10 - 2 tablespoons cornstarch
11 - 1/4 cup cold water
12 - Salt and black pepper
13 - Sliced green onions and toasted sesame seeds for garnish

# Instructions:

01 - Trim the chuck roast and slice it into thin strips against the grain. Place the beef in the bottom of a 6-quart slow cooker.
02 - In a medium bowl, whisk together the beef broth, soy sauce, oyster sauce, brown sugar, sesame oil, garlic, and ginger until the sugar dissolves. Pour over the beef and stir to coat.
03 - Cover and cook on low for 3 to 4 hours, until the beef is very tender but still holds its shape.
04 - In a small bowl, whisk the cornstarch with the cold water until completely smooth.
05 - Stir the slurry into the slow cooker. Add the broccoli florets on top, cover, and switch to high. Cook for 20 to 30 minutes until the sauce is glossy and the broccoli is bright green and crisp-tender.
06 - Taste and season with salt and pepper if needed. Serve over steamed rice, garnished with green onions and sesame seeds.
