Juicy shrimp and crisp fresh vegetables tossed in a glossy ginger garlic stir fry sauce, ready in about 25 minutes.

# Ingredients:

For the sauce

01 - 1/4 cup (60 ml) low-sodium soy sauce
02 - 2 tablespoons oyster sauce
03 - 1/4 cup (60 ml) chicken broth or water
04 - 1 tablespoon honey
05 - 1 tablespoon rice vinegar
06 - 1 teaspoon toasted sesame oil
07 - 1 tablespoon cornstarch
08 - 1 teaspoon sriracha or chili garlic sauce, optional

For the stir fry

09 - 1 lb (450 g) large raw shrimp, peeled and deveined
10 - 1/2 teaspoon kosher salt
11 - 1/4 teaspoon black pepper
12 - 2 tablespoons avocado oil or neutral cooking oil, divided
13 - 2 cups (180 g) small broccoli florets
14 - 1 medium red bell pepper, thinly sliced
15 - 1 medium carrot, thinly sliced on the bias
16 - 1 1/2 cups (150 g) snow peas, trimmed
17 - 3 cloves garlic, minced
18 - 1 tablespoon fresh ginger, finely grated
19 - 2 scallions, thinly sliced
20 - 1 tablespoon sesame seeds, optional
21 - Cooked rice or noodles, for serving, optional

# Instructions:

01 - Whisk soy sauce, oyster sauce, broth, honey, rice vinegar, sesame oil, cornstarch, and sriracha until the cornstarch is fully dissolved. Set near the stove.
02 - Pat the shrimp very dry with paper towels. Season with salt and pepper so they are ready to sear quickly.
03 - Heat 1 tablespoon oil in a large wok or skillet over medium-high heat. Add shrimp in a single layer and cook for 1-2 minutes per side, until pink and just opaque. Transfer to a plate.
04 - Add the remaining 1 tablespoon oil to the pan. Stir fry broccoli and carrot for 2-3 minutes, until bright and barely tender.
05 - Add bell pepper and snow peas. Stir fry for 1-2 minutes, then add garlic and ginger and cook for 30 seconds until fragrant.
06 - Stir the sauce again, then pour it into the pan. Cook for 45-60 seconds until glossy and thickened. Return shrimp and any juices to the pan, toss to coat, and finish with scallions and sesame seeds.
