Easy Shrimp Lo Mein Recipe (Print Version)

# Ingredients:

01 - 3 tablespoons soy sauce
02 - 2 tablespoons oyster sauce
03 - 1 tablespoon sugar, plus extra for caramelizing onions

→ Main ingredients

04 - 8 ounces Lo Mein noodles (or spaghetti)
05 - 1 pound raw shrimp, peeled and deveined
06 - 1 onion, thinly sliced
07 - 1 garlic clove, minced
08 - 4 baby bok choy, cut into 1-inch pieces and rinsed well
09 - 2 small carrots, cut into matchsticks
10 - 4 green onions, thinly sliced

→ Additional ingredients

11 - 2 tablespoons avocado oil, divided
12 - 1 cup vegetable broth
13 - ¼ teaspoon salt, plus extra for pasta water
14 - ¼ teaspoon black pepper

# Instructions:

01 - Mix oyster sauce, soy sauce, and sugar in a bowl until well combined. Set aside for later.
02 - Heat 1 tablespoon avocado oil in a large wok or skillet over medium heat. Add sliced onions with salt and a pinch of sugar. Cook for about 25 minutes, stirring occasionally, until they turn deeply golden brown.
03 - While onions cook, boil noodles in salted water according to package directions. Drain and rinse under cold water to stop the cooking process.
04 - In the same wok, cook shrimp and garlic together for 3-4 minutes until shrimp turn pink and curl up. Move the onion, shrimp, and garlic mixture to a plate.
05 - Add remaining oil to the wok and stir-fry bok choy and carrots for 2 minutes. Pour in vegetable broth, cover, and cook 2 more minutes until veggies are crisp-tender.
06 - Add the noodles, shrimp mixture, prepared sauce, and black pepper to the wok. Stir-fry everything together for 2 minutes until the noodles soak up some sauce. Top with sliced green onions before serving.

01 - You can substitute spaghetti if Lo Mein noodles aren't available
