Sheet Pan Breakfast Burritos (Print Version)

# Ingredients:

→ Base

01 - 10 flour tortillas
02 - 12 eggs
03 - 2 pounds ground sausage
04 - 4 cups shredded cheddar cheese
05 - 3 tablespoons butter, melted

→ White Gravy

06 - 4 tablespoons butter
07 - 4 tablespoons flour
08 - 2 cups whole milk
09 - ½ teaspoon salt
10 - ½ teaspoon black pepper

→ Vegetables

11 - 1 red pepper, diced small
12 - 1 bunch green onions, sliced small

# Instructions:

01 - Preheat oven to 425°F. Make white gravy by cooking butter and flour roux, gradually adding milk until thickened. Season with salt and pepper.
02 - Cook and drain sausage. Beat and scramble eggs separately.
03 - Brush sheet pan with melted butter. Layer 6 tortillas around outside edges and 2 in middle, pressing into corners.
04 - Layer gravy, sausage, eggs, peppers, onions, and cheese. Cover with remaining tortillas and fold overhanging edges to center.
05 - Brush top with butter, cover with second sheet pan. Bake 20 minutes, remove top pan and bake 5 more minutes until browned.
