Sesame Chicken Green Bean Stir Fry (Print Version)

# Ingredients:

→ Sauce

01 - 1/3 cup low sodium soy sauce or coconut aminos
02 - 1/3 cup water
03 - 3 cloves garlic, minced
04 - 2 tablespoons coconut sugar or brown sugar (or 1 tablespoon honey)
05 - 1 tablespoon toasted sesame oil
06 - 1 tablespoon rice vinegar
07 - 1 tablespoon fresh grated ginger
08 - 1 tablespoon sesame seeds (or tahini)
09 - ½ teaspoon red pepper flakes
10 - ½ tablespoon arrowroot starch (or cornstarch)

→ Chicken

11 - 1 pound lean ground chicken (or turkey)
12 - ½ tablespoon toasted sesame oil
13 - ½ teaspoon garlic powder
14 - Salt and pepper to taste

→ Vegetables

15 - ½ tablespoon toasted sesame oil
16 - 2 large carrots, thinly sliced
17 - 1 white onion, chopped
18 - 1 red bell pepper, chopped
19 - 12 ounces fresh green beans, trimmed and halved

→ Garnish

20 - ½ cup roasted cashews, chopped
21 - Scallions (green parts only)
22 - Extra sesame seeds

# Instructions:

01 - Whisk together soy sauce, water, garlic, coconut sugar, sesame oil, rice vinegar, ginger, sesame seeds, red pepper flakes and arrowroot starch in a medium bowl. Set aside.
02 - Heat ½ tablespoon sesame oil in a large pot over medium heat. Add ground chicken, season with garlic powder, salt and pepper. Cook until no longer pink, breaking up meat. Transfer to a bowl.
03 - In same pot, heat ½ tablespoon sesame oil. Cook onion and carrots for 2-4 minutes. Add green beans and bell pepper, cooking 6-8 minutes until beans are tender-crisp.
04 - Return chicken to pot with vegetables. Reduce heat to low and add sauce. Cook 2-4 minutes until sauce thickens. Garnish with cashews, sesame seeds, and scallions.

# Notes:

01 - Can be served with rice, cauliflower rice, or quinoa
02 - Start rice first if serving with it, especially brown rice which takes 40 minutes
03 - Ground turkey can be substituted for chicken
