Crunchy Sesame Chicken Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 4 cups shredded green cabbage
02 - 2 cups shredded red cabbage
03 - ½ cup diced green onion
04 - ¾ cup fresh cilantro, diced
05 - 1 cup shredded carrots
06 - 1 red bell pepper, thinly julienned
07 - 1 jalapeño, seeded and diced

→ Protein

08 - 1 recipe Grilled Sesame Chicken

→ Dressing

09 - 1 batch Sesame Ginger Dressing

→ Toppings

10 - ⅓ cup toasted sliced almonds
11 - ⅓ cup roasted cashew halves
12 - Sesame seeds for garnish
13 - Extra cilantro for garnish
14 - Extra green onion for garnish
15 - Jalapeño slices for garnish
16 - Crispy wonton strips (optional)

# Instructions:

01 - Marinate and cook chicken according to Grilled Sesame Chicken recipe.
02 - Prepare Sesame Ginger Dressing according to recipe and set aside.
03 - In large bowl, combine green and red cabbage, green onion, cilantro, carrots, bell pepper, and jalapeño. Pour dressing over and toss well.
04 - Transfer to platter. Top with almonds, cashews, sesame seeds, and additional cilantro, green onion, and jalapeño slices. Add optional wonton strips if desired.

# Notes:

01 - Can be made vegetarian/vegan by replacing chicken with tofu or chickpeas
02 - Serves 4 as main dish or 6 as side dish
03 - Can customize with different vegetables
