Saucy Beef Burritos (Print version)

Seasoned beef and beans wrapped in flour tortillas, baked under red sauce and cheese until bubbly.

# Ingredients:

For the beef filling

01 - 1 lb (450 g) ground beef
02 - 1 small yellow onion, finely chopped
03 - 3 cloves garlic, minced
04 - 1 tablespoon chili powder
05 - 1 teaspoon ground cumin
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon kosher salt
08 - 1/4 teaspoon black pepper
09 - 1 (16 oz / 454 g) can refried beans
10 - 1 (4 oz / 113 g) can diced green chiles, drained

For the sauce and burritos

11 - 2 cups (480 ml) red enchilada sauce
12 - 1/2 cup (120 ml) beef broth
13 - 1 tablespoon tomato paste
14 - 6 large flour tortillas, 10 to 12 inches
15 - 2 1/2 cups (280 g) shredded Mexican cheese blend, divided
16 - Cooking spray or 1 teaspoon oil for the baking dish

For serving

17 - 1 cup shredded lettuce
18 - 1 cup diced tomatoes
19 - 1/2 cup sour cream
20 - 1/4 cup sliced green onions
21 - 2 tablespoons chopped cilantro
22 - Pickled jalapenos or hot sauce, optional

# Instructions:

01 - Preheat the oven to 375 F. Lightly grease a 9x13-inch baking dish.
02 - Cook the ground beef and onion in a large skillet over medium-high heat for 6 to 8 minutes, breaking up the meat, until the beef is fully cooked. Drain excess fat.
03 - Stir in garlic, chili powder, cumin, oregano, salt, and pepper. Cook for 30 seconds, then add refried beans and green chiles. Stir until the filling is thick and hot.
04 - In a small saucepan, whisk together enchilada sauce, beef broth, and tomato paste. Simmer for 5 minutes, then keep warm.
05 - Warm the tortillas until flexible. Spoon about 2/3 cup filling down the center of each tortilla and sprinkle with 2 tablespoons cheese. Fold in the sides and roll tightly.
06 - Spread 1/2 cup sauce in the baking dish. Arrange the burritos seam-side down, spoon the remaining sauce over the top, and sprinkle with the remaining cheese. Bake for 18 to 20 minutes, until bubbly.
07 - Let the burritos rest for 5 minutes. Top with lettuce, tomatoes, sour cream, green onions, cilantro, and jalapenos if using.

# Good to know:

01 - For less heat, use mild enchilada sauce and skip the jalapenos.
02 - For a saucier plate, warm extra enchilada sauce and spoon it around each burrito after baking.
03 - Best served hot after a 5-minute rest.
