Santa Macarons (Print Version)

# Ingredients:

01 - 100g golden sugar.
02 - 100g egg whites.
03 - 105g almond flour.
04 - 105g powdered sugar.
05 - 4g egg white powder (optional).
06 - Red gel food coloring.
07 - Royal Icing: 187g powdered sugar.
08 - 1 tablespoon meringue powder.
09 - 4 tablespoons water.
10 - Black and yellow gel coloring.
11 - Buttercream: 63g all-purpose flour.
12 - 113g unsalted butter.
13 - 50g golden sugar.
14 - 156g powdered sugar.
15 - 1 teaspoon vanilla extract.
16 - 1/8 teaspoon almond extract.
17 - 1/2 tablespoon milk.
18 - 50g desiccated coconut.

# Instructions:

01 - Make macaron shells following French method.
02 - Let shells rest until completely dry.
03 - Bake at 300°F for 15-20 minutes.
04 - Make royal icing, divide and color.
05 - Decorate with black belt and yellow buckle.
06 - Heat treat flour, make buttercream.
07 - Fill and roll edges in coconut.

01 - Longer rest time needed for red shells.
02 - Egg white powder optional.
03 - Freezes well.
04 - Heat treat flour for safety.
